Kitchen Nemesis

I'm a good cook. And a good baker. Not great, but good. Give me a recipe, and I'm all over it. Seriously, I'm not an idiot when it comes to the kitchen, recipes or following directions (I was a teacher for heaven's sake- giving/following directions was my life!!)

But for the life of me, I cannot cook rice.

Don't ask how I did it, I have no clue.

Jer laughs, but this is a serious problem. If we lived (or even visited) a 3rd world country, we'd starve. And we are living on a rice and beans budget. Hello- this is half our diet!!

*sigh*

ok Kim, I must step in. Please try the following for FOOL PROOF brown rice.

Preheat oven to 375.
Measure 1 and 1/2 cups brown rice into an 8x8 dish
sprinkle with salt
drizzle with olive oil
boil 2 and 1/2 cups water in the microwave
pour water over rice/salt/oil.
cover TIGHTLY with foil
bake one hour
enjoy.

If my husband can do this, I have EXTREME faith in you. Rock the Rice.

Rice can be tricky. Brown rice never works for me - I may have to try the recipe above. I usually do white rice on the stove, but a friend of mine swears by her rice cooker. Maybe you ought to get one of those. Mother's Day is coming up! haha :)

I thought I would mention, also, that rice cookers are AWESOME and you can pick up a small, cheap one for under $5 at lots of places, like Walgreens or Walmart, during sales - we have one that we paid $4 and I LOVE IT!! Does the job perfectly and quickly every time!!
